Kitchari (kitch-a-ree) is considered one of the most nourishing and healing foods in Ayurveda. The humble yet powerful combination of rice and beans are staples globally – they represent survival itself. In kitchari, mung beans and basmati rice are slow cooked with loads of water to create a deeply hydrating, protein rich meal that is a brilliant conduit for the medicine of spices.
A warm bowl of kitchari with a glistening, golden pool of ghee and a brightening wedge of lemon is a symbol of glorious and abundant well-being. This ultimate kitchen workhorse can be a simple, affordable weeknight meal for the whole family, it can be used to cleanse and rebalance with a mono-cleanse, and it can be used like a classic chicken soup – to cure whatever is ailing you.
